The Black Pig meat has a wild flavor with hazelnut notes, given by the natural diet of this breed, while its fat is much softer and melts in the mouth.
Pedrazzoli Black Pigs are raised in a hilly area in a semi-wild state and have a fondness for undergrowth herbs and acorns.

We recommend serving the salami on a wooden cutting board, paired with crusty bread, apple mustard or wild strawberry mustard, and aged cheeses such as Grana Padano D.O.P.
