The Salame "della Bassa" is a true icon of Italian gastronomy, often exploited and impoverished. Time, sacrifice, tradition, and patience are Bettella's weapons in the battle against industrial manipulations that condition our palates to artificial flavors.

Today, the authentic salame reclaims its dignity and nobility by saying "no" to convenient speculative strategies. NO to lean pigs raised quickly on artificial feed and bran, with minimal fat.

The Salame della Bassa Bettella is the offspring of the "Maiale Tranquillo®" (Tranquil Pig), which generously contributes all the beauty of its 300 kg of weight, between mature, well-marbled meats and fixed fat, the latter being the result of a healthy diet without feed concentrates or feeds.

What is "Maiale Tranquillo®"?

"Maiale Tranquillo®" (Quiet Pig®) is a concept that was born in the 1960s and refers to a particular type of pig farming that focuses on animal welfare, natural growth, and quality feed. This approach contrasts with intensive farming practices, avoiding stress, poor living conditions, and accelerated growth for the animal.

The Quiet Pig® grows freely, outdoors, breathing clean air and is not subjected to any force feeding to allow a "performance" growth in reduced times. On the contrary, its natural development rhythm is respected: it takes two years for the meat to firm up and the right layer of fat to develop. The goal is to reach a weight of 300 kg with patience and attention, through the use of adequate spaces and careful genetic selection.

Nutrition plays a key role in this process. The diet is mainly based on corn produced and dried directly by the company that raises the pigs. This allows direct control over the quality of food provided to the animals and helps to enhance the fat produced, which becomes a distinctive sign of the meat.
