Cut:

A prized cut from the back of the loin, from which steaks with both tenderloin and sirloin are obtained.

Cooking:

Best cooked over charcoal, but it can also be grilled or pan-seared. The key is to ensure a high temperature. The optimal cooking should bring the core temperature to 52-55°C, resulting in rare meat.

Aging:

"La Cigolina" meat is aged for at least 40 days and delivered vacuum-sealed, strictly maintaining the cold chain.
